Évaluation de la teneur en iode des sels alimentaires dans la wilaya de Sétif

Abstract

Iodine is an essential element that plays a vital role in maintaining human health. Therefore, it is crucial to ensure an adequate iodine intake, particularly through the consumption of iodized salt, to prevent thyroid diseases. To determine the iodine content in table salt consumed by the inhabitants of the Sétif province, seven brands of salt were analyzed in the laboratory of mineral chemistry at the Faculty of Medicine, Ferhat Abbas University 1. The analytical method used was iodometry, which is recognized as a reference method. The seven samples collected in the Sétif province were analyzed in accordance with the requirements of Executive Decree No. 90/40 published in the Official Journal of the People's Democratic Republic of Algeria. The results revealed that only 28.57% of the brands comply with Algerian legislation (55.25–84.5 mg KIO₃/kg), while 71.43% of the samples do not meet this standard. The brands "Rafi’e," "Ezzed," and "El Houda" showed iodine levels below theregulatory threshold, whereas "ORCA" and "TORNADO" exhibited levels above the permissible limits. Only "Essaida" and "Chamsi" met the recommended standards.
