Abstract
This study explores the formation and bioactivity of Maillard reaction products (MRPs) between chitosan and alginate, focusing on their structural and properties. Chitosan and alginate solutions (1:1, v/v) are heated at 100 °C and pH 4.5 for 3 and 6 hours to form Cs/Alg (3h) and Cs/Alg (6h) MRPs. Structural modifications are confirmed by FTIR, UV-Vis spectroscopy, X-ray diffraction (XRD), analysis (TGA), and zeta potential measurements. The biological properties of both the Synthesized compounds and the initial polymers are assessed, including antioxidant, anti-inflammatory, and antimicrobial activities, with significant observed, particularly after 6 hours of reaction. Blood compatibility and coagulation analysis results suggest their safety for internal use. The MRPs also exhibit significant enzymatic inhibitory activities, particularly against polyphenol oxidase (PPO) and α-amylase, with Cs/Alg (6h) showing the highest α-amylase inhibition. An increase in the sun protection factor (SPF) is also observed.
