Abstract

Given the limitations of traditional sources for collage, chicken feet, an abundant by-product of the poultry industry, offer an economical and environmentally friendly alternative. This work explores the potential of chicken feet as a sustainable and valuable source of collagen, addressing the extraction, purification, and quality control methods specific to this raw material, and characterizes the physicochemical, biological, and functional properties of the resulting collagen. It highlights the multiple applications of this collagen in the medical, cosmetic, and food sectors, confirming that the use of chicken feet for collagen extraction represents a promising avenue for a circular industry and the development of high-value-added products.
