Abstract

Animal-based foods represent a major route of transmission of antibiotic resistance, due to the excessive use of these drugs in livestock for therapeutic, prophylactic, or growth-promoting purposes. This bibliographic synthesis aims to highlight the various pathways of contamination of food products by resistant bacteria, resistance genes or antibiotic residues, as well as the mechanisms of gene transfer of resistance within the food chain through various products such as meat, milk and eggs, while highlighting on microbiological, chromatographic, and molecular detection methods. The objective is to better understand the health risks associated with the consumption of contaminated products and to explore possible alternatives to antibiotics in order to curb the spread of resistance. The results of this synthesis demonstrate the scale of the issue globally and emphasize the need for an integrated preventive strategy within the "One Health" approach.
