| dc.description | يعتبر التراث المعماري العثماني شاهدا على التاريخ والحضارة، ولكن اليوم اصبحت في حالة متدهورة و كارثية. مدينة قسنطينة جزء من هذا التراث , و لكن هي ايضا في حالة متدهورة و منسية من طرف سكانها و ذلك بسبب التهاون و عدم وجود امكانيات من اجل حمايتها و الحفاظ عليها , من اجل ذلك يجب البحث عن طرق احياء و بعث هطا التراث المهمل. في بحثنا هذا ركزنا على التراث, السياحة و فن الطبخ كعناصر اساسية من اجل اعادة قيمة و هوية مدينتنا . وجدنا ان السياحة المتعلقة بفن الطبخ احد القطاعات الاكثر اهمية في ميدان السياحة , هي افضل وسيلة من اجل اعطاء المدينة العتيقة دور اساسي في الولاية , كما ستساهم على المستوى الوطني و العالمي. | |
| dc.description.abstract | Ottoman architectural heritage is a witness of history and civilization, but today it is in a bad state. A medina of Constantine, it's a part of this heritage, but is also in a state of deterioration, it is forgotten by his people, because of complacency and lack of opportunities for protection and preservation. For the, we must seek methods and opportunities to revive this heritage that is neglected. In our work we are based on heritage, tourism and gastronomy as a basic elements to give back to our Medina value and identity, we find that the food tourism one of the most important sector in tourism, that it is the best option to give a medina a structuring role in the while participating in across the country and the world. Dans notre travail on est basée sur le patrimoine, le tourisme et la gastronomie comme des éléments de bases pour redonner à notre médina sa valeur et son identité, on à trouver que le tourisme gastronomique l’un des secteurs les plus importants dans le tourisme, que il est la meilleur possibilité pour donner à la médina un rôle structurant dans la ville tout en participant, à l’échelle du pays. | |
