Abstract
Biofilms are defined as bacterial populations composed of a single bacterium or a mixture of bacteria enclosed in a matrix of extracellular polymeric substances. They form on surfaces through several stages. In agri-food industry, the presence of pathogenic microorganisms in food represents a major public health issue, as well as a significant source of economic losses on a global scale. For this reason, early detection is necessary, and the implementation of a strict hygiene protocol is important to prevent their formation and to avoid the emergence of resistance to cleaning agents and disinfectants.

يُعرَّف الغشاء الحيوي )البايوفيلم( على أنه تجمعات بكتيرية تتكوَّن إما من نوع واحد من البكتيريا أو من خليط من عدة أنواع،
وتكون محاطة بمصفوفة من المواد البوليمرية خارج الخلوية. تتكوَّن هذه الأغشية على الأسطح عبر عدة مراحل. في صناعة
المواد الغذائية، يُعد وجود الكائنات الحية الدقيقة الممرِضة في الأغذية تحديًا كبيرًا يتعلق بالصحة العامة، بالإضافة إلى كونه
مصدرًا رئيسيًا للخسائر الاقتصادية على مستوى العالم. لذلك، فإن الكشف المبكر ضروري، كما أن تطبيق بروتوكول صارم
