Abstract

Ottoman architectural heritage is a witness of history and civilization, but today it is in a bad state. A medina of Constantine, it's a part of this heritage, but is also in a state of deterioration, it is forgotten by his people, because of complacency and lack of opportunities for protection and preservation. For the, we must seek methods and opportunities to revive this heritage that is neglected. In our work we are based on heritage, tourism and gastronomy as a basic elements to give back to our Medina value and identity, we find that the food tourism one of the most important sector in tourism, that it is the best option to give a medina a structuring role in the while participating in across the country and the world.
